Fresh produce such as fruit, vegetables, meat or fish is picked at its prime and taken directly to the canning factory. The produce is washed under fast water jets, then peeled, trimmed, cored and sliced as appropriate before being packed into empty cans moving along a conveyor belt.
Liquid such as brine, water, oil, syrup or fruit juice is added to fill the can. The lid is sealed on top and tested for air tightness. Each can is then sent to be cooked in large cookers that heat them to the precise temperature and pressure required for the specific food type.
